Make this fan favorite for the big game! I got this recipe from a friend, Erin Bulman, and tweaked on it a bit to my liking. This is a great appetizer that you can make to taste. Turn up the heat with more jalapeno!
1- 15.8 oz can black eyed peas, rinsed/drained
1- 15.8 oz can black beans, rinsed/drained
1- 16 oz can dark red kidney beans, rinsed/drained
1- 15.8 oz can gold and white kernel corn, drained
1 tomato, chopped
1 green bell pepper, finely chopped (I always threw in some orange pepper for color)
1 small sweet onion
2 green onions, sliced
1 green jalapeno pepper, seeded and minced
1 to 2 garlic cloves, or garlic powder (I just toss some in and taste it)
1 1/4 cup Kraft Zesty Italian dressing
1/4 cup chopped fresh cilantro
Mix everything together and let it chill for a few hours before serving. You can top it with extra cilantro for prettiness and flavor. Serve with Fritos Scoops or regular Scoops.
